BEAT goat cheese, yogurt, honey and mint with an electric mixer until combined and smooth, about one minute. Set aside.
PREHEAT grill to 400°F. Brush both sides of watermelon with olive oil, then fully wrap each wedge in a sheet of Reynolds Wrap® Heavy Duty Foil.
GRILL for 5 minutes in covered grill over direct heat. Turn watermelon and grill additional 5 minutes or until watermelon is tender.
REMOVE from foil and serve immediately with a dollop of goat cheese mixture.
