PREHEAT oven to 350°F. OPEN Parchment Cooking Bag and PLACE on a medium (10"x15"x1") pan with the seam side facing up.

PLACE sliced sausage in the bag in an even layer. SPRINKLE with half of the Cajun seasoning. LAYER diced potatoes evenly over the sausage. LAYER the diced bell peppers and onion evenly over the potatoes. DRIZZLE evenly with the olive oil. SPRINKLE the remaining Cajun seasoning evenly over the ingredients.

CLOSE BAG by rolling the open end two times towards the food, allowing some room for heat to circulate inside. SCRUNCH the rolled end slightly so the bag stays closed. PLACE baking pan with bag in preheated oven.

BAKE 30 to 35 minutes, until sausage reaches 165°F on a meat thermometer and the vegetables are done. UNFOLD the end of the bag and cut or tear the top of the bag open. Sprinkle with cheese if desired. Let set for a few minutes for cheese to melt. Remove food from the bag using a silicon or wooden spoon.
